Joy's Mediterranean Encrusted Corvina
Corvina, also known as the corvina drum (Cilus gilberti), is a saltwater fish of the Sciaenidae family (commonly called croakers or drums). It inhabits mostly tropical to temperate coastal waters of the southeastern Pacific along Central and South America.
INGREDIENTS:
1 Lb Corvina or any white fish (Salmon is great too)
2 Tbsp Original Garlic Joy
2 Tbsp Joy’s Mediterranean Spice Mix
3 Tbsp Extra Virgin Olive Oil
3 Tbsp Butter
3 Tbsp Fresh parsley or cilantro
Juice of ½ lemon
DIRECTIONS:
Cover the Corvina fillet with the Original Garlic Joy and marinate for 3 hours in the fridge. Place Olive Oil in a pan on med-high heat. Sprinkle the seasoning on both sides of fish and place in the pan cooking for 3 minutes on each side. Add butter and the lemon juice to the pan, turn the heat down to med-low and begin drizzling the butter and oil on top of the fish with a spoon as it is cooks for 3-4 minutes or until the fish is fully cooked and easily flakes off. Add the fresh parsley or cilantro and you serve.
