Summer Squash and Eggplant Mediterranean Salad

  • 4 ounces              JOY's Gourmet Garlic Lemon Salad Dressing
  • 4 ounces              JOY's Gourmet Original Garlic Spread
  • 8 ounce                Goat Cheese
  • 12 cups                 Baby Mixed Greens
  • 8 ounces              Roasted Eggplant
  • 8 ounces              Summer Squash
  • 1 large                  Tomato
  • 1 ounce                Sesame Seeds


Slice the Squash ans Eggplant in 1 inch wide slices length wise.  Spread a thin layer of JOY's Original Garlic on each slice and bake at 350 for 45 min.  Take out of the oven and let them cool.  Mix the baby greens with JOY's Garlic Lemon Salad Dressing

Layer the baby greens and the roasted eggplant and squash in a serving dish.  Top with feta cheese, few slices of tomato and toasted sesame seeds.
