Ingredients:

1 Lb.      Fresh wild salmon

8 oz        Joy’s Gourmet Florida Fusion dressing and sauce

1 Tbsp   Blackberry or Blueberry jam

2 tsp      Sesame oil

2 tbsp   Sesame seeds

 Instructions:

  • Cut the salmon in two equal parts and place in a watertight container (such as a zippered sandwich bag).

  • Add 4 oz Joy's Gourmet Florida Fusion sauce to the salmon in the bag and marinade in the refrigerator for at least 1 hour.

  • Mix 4 oz of Florida Fusion with the berry jam and sesame oil in a small saucepan. Place the saucepan on the stove on low/medium and heat to reduce and thicken, then set aside.

  • Remove the salmon from the bag, throw out excess marinade.

  • In a second skillet, saute the salmon at least 3-4 minutes on each side over medium heat.

  • When the salmon begins to flake with a fork, pour the Florida Fusion and berry jam reduction glaze over the salmon in the saucepan.

  • Plate it and serve with a delicious romaine and citrus salad (see below).

Serving suggestion:

Toss together chopped romaine lettuce, 1 whole-sectioned tangerine (or orange), 4 oz Joy's Gourmet Florida Fusion dressing/sauce, and 4 oz of blue (or feta cheese). Mix well and serve with the salmon. Easy, quick, done and delish. You can also do this recipe with shrimp and sear until they are pink before pouring over the glaze.
