Joy's Mediterranean Encrusted Corvina
Corvina, also known as the corvina drum (Cilus gilberti), is a saltwater fish of the Sciaenidae family (commonly called croakers or drums). It inhabits mostly tropical to temperate coastal waters of the southeastern Pacific along Central and South America.
This is our Mediterranean house spice mix created to use with our garlic infused or original EVOO as a dipping seasoning. Our customers are raving over using it in many other dishes like mashed potatoes, fried eggs, meatballs, pizza dough, and much more! We’ve used it in our pasta dishes and it is incredible. Ingredients include: Parsley, Oregano, Basil, Granulated Garlic, Crushed Red Pepper, Add’l Spices, and Salt.

INGREDIENTS:
1 Lb Corvina or any white fish (Salmon is great too)
2 Tbsp Original Garlic Joy
2 Tbsp Joy’s Mediterranean Spice Mix
3 Tbsp Extra Virgin Olive Oil
3 Tbsp Butter
3 Tbsp Fresh parsley or cilantro
Juice of ½ lemon
DIRECTIONS:
Cover the Corvina fillet with the Original Garlic Joy and marinate for 3 hours in the fridge. Place Olive Oil in a pan on med-high heat. Sprinkle the seasoning on both sides of fish and place in the pan cooking for 3 minutes on each side. Add butter and the lemon juice to the pan, turn the heat down to med-low and begin drizzling the butter and oil on top of the fish with a spoon as it is cooks for 3-4 minutes or until the fish is fully cooked and easily flakes off. Add the fresh parsley or cilantro and you serve.
