Garlic Pasta with Butternut Squash Italian Sausage & Broccoli Rabe

 
 

Ingredients:

1 butternut squash cut in half; seeds removed.

4 TBSP Joy’s Gourmet Garlic spread with Sundried Tomato

1 lb Italian sausage, casing removed

1 bunch broccoli rabe or rapini

4 oz heavy cream

½ lb cooked pasta (for a delicious option see homemade pasta level, below)

2 tsp salt

1 tsp black pepper

Directions:

Spread 1 tablespoon of Joy’s Gourmet Garlic Spread on each half of the squash (seeds removed) and bake at 350 ° F for 40 min, until fork tender. Steam the rapini for 10 min, until tender.

Cook sausage in a hot pan, placing small amounts at a time with your fingertips. When cooked, add the roasted butternut squash and the remaining Joy’s Gourmet Garlic Spread. Add the heavy cream and cook for 3 min until all ingredients are incorporated and the mixture is thickened. Add the rapini and serve over pasta.

 

Homemade Garlic and Sundried Tomato pasta

Ingredients:

1 cup semolina

1 egg

2 Tbsp Joy’s Gourmet Garlic spread with Sundried Tomato

1 tsp salt

 Directions:

Place semolina flour on a clean surface and make a nest in the middle, and place the egg, Joy’s Gourmet Garlic Spread, and salt in the nest. Use a fork to gently break up the egg, keeping the flour wall intact.  Once the egg is broken down, use your hand to gently mix the flour with the other ingredients. Continue working on the dough to bring together into a shaggy ball then mix (such as in a Kitchen Aid dough mixer – it took me 8 minutes) until cohesive and smooth. If the dough is sticky, just add a little more flour. Let it rest in the refrigerator for a ½ hour before rolling it flat (I like mine thin). Cut into ribbons about 1-inch wide. Cook the pasta for 4 minutes.
