SHRIMP AND STREET CORN SALSA TACOS

 
 

INGREDIENTS

1 lb shelled and deveined large shrimps (approximately 16-23 shrimp)

1 jar (8 oz) of Joy’s Gourmet Garlic Spread with Chipotle or Jalapeño Cilantro

½ cup chopped cilantro

2 medium-sized limes, cut in half

8 medium corn or flour tortillas

DIRECTIONS:

Marinate the shrimp in 4 oz of Garlic Spread for 1 hour. Skewer the shrimp and cook on a hot grill for 1-2 minutes on each side until pink in color. Place the halved lime on the grill for 3 – 4 minutes, or until you can see the grill marks.

Grill the tortillas for 30 seconds on each side. Spread ½ tablespoon of Garlic Spread on each tortilla. Add 2 spoons of Street Corn Salsa and 2 – 3 grilled shrimp to each taco. Top with chopped cilantro and a generous squeeze of lime juice from the grilled limes.
