This easy-to-make buttery garlic acorn squash is out of this world. A gorgeous and flavorful side dish for almost everything! When we first baked it, we all went crazy over the incredible flavor combination. Even one of our team members that is not a fan of acorn squash converted and it’s now a go-to wintery side dish for his family. Because of the mild sweet taste, it goes perfect with garlic. You’ll have to taste it to believe it. Enjoy!

INGREDIENTS:

  • 1 large acorn squash

  • 2 heaping Tbsp of Joy’s Gourmet Original Garlic Spread

  • 1 Tbsp of Joy’s Gourmet Mediterranean Spice Mix

  • 1 Tbsp of unsalted butter

  • Freshly ground black pepper

  • Salt

               

DIRECTIONS:                 

1.       Preheat oven to 400°.

2.       Cut acorn squash in half horizontally.

3.       Scoop out seeds.

4.       To balance the squash on a sheet pan, you will need to cut a tiny slice off the bottom of each.

5.       Place squash on a sheet pan.

6.       Drop a ½ Tbsp of butter into each cavity of the squash.

7.       Drop 1 heaping Tbsp of garlic spread into each cavity over the butter.

8.       Sprinkle with Mediterranean spice mix, pepper and salt.

9.       Roast in oven for 40-45 minutes until tender.
