Wild Shrimp in GarlicJoy Chipotle with Cucumber Mango and Salad
Ingredients:
4 Tbsp Chipotle Garlic Joy4 Large cucumbers, peeled, and cut into 1/2-inch cubes
1 Large mango, peeled, pitted, and cut into 1/2-inch cubes
1 pound Medium shrimp, cooked
3 Tbsp Rice wine vinegar
10 leaves lettuce
2 Tbsp Chopped Cilantro
1 Tbsp Salt
Preparation:
1. Mix vinegar, Chipotle Garlic Joy, cucumbers, mango, shrimp, and cilantro in large bowl.
2. Pour dressing over the shrimp; toss to lightly coat. Season with salt.
3. Arrange 2 lettuce leaves on each plate. Top with shrimp salad. Garnish and serve.
Yield 6-8 servings
