Clam Scampi with Fettuccine


Garlic Joy Clams with Spinach Fettuccine

Ingredients:
3 Tablespoons Original Garlic Joy -OR- Sun Dried Tomato Garic Joy
2 lbs Clams, rinsed well
1/2 Cup Fresh Parsley, chopped
2 Teaspoons Lemon Juice
1/2 Cup Dry White Wine
1 Large Tomato, diced
8 ounces Spinach Fettuccine, cooked
Salt & Pepper To Taste

Preparation:
1. Add Garlic Joy to clams, cook and stir 5 minutes.
2. Add Parsley, lemon juice, salt, pepper and wine. Cook two minutes, stirring occasionally, until clams open.
3. Stir in tomatoes and serve over fettuccine.
Yields 4 servings.
