Eating life in every bite!!!

The kitchen table has always been the center of life in my family.  There is where the aromas, great flavors, and beauty of fresh ingredients come together for a perfect meal.  The table is also where the daily stories are shared with family members and friends.  We toast one another and do life with every bite.

For me, food has to look and smell as good as it tastes.  If your eyes and nose enjoy the experience so will your stomach, given that all is made from healthy ingredients.  That is the secret, my friends!  One of the simplest and most delicious dishes to make is Pesto Pasta.

Joy’s Gourmet, 100% Natural, basil pesto is made from superior ingredients, fresh basil, fresh garlic and the best available extra virgin olive oil.  We use white walnut in place of pine nuts for two simple reasons, availability and taste.  In the US the most common available pine nuts are from China.  The Chinese pine nuts are round and have metal aftertaste, while the Mediterranean pine nuts are thin long and are pungent in flavor.  We only use fresh basil, and we never use spinach in our basil pesto.  Other companies may do so to stretch the amount of pesto making it more affordable since spinach is 600% cheaper than fresh basil.  Other pesto's are usually weak in flavor, and one has to use almost four (4) times the amount in order taste the basil.

Our fresh basil supplier is thoroughly committed to being the leading provider of high quality, culinary herb in North America.  Our farm recognizes the responsibility to be a conscientious steward of the environment and to make positive contributions to the well-being of our community.  We receive the fresh basil with complete microbiological testing ensuring that it is free of any illness causing bacteria.

Pesto Pasta

 10 Oz            Pasta (Joy’s Garlic Parsley)

2 Tbsp           Garlic Joy Original

2 Tbsp           Joy’s gourmet Pesto

4 Tbsp           Parmesan cheese

2 Tbsp           Joy’s Gourmet Olive oil

 

Cook the pasta, drain and transfer to a mixing bowl.  Add the Garlic Joy and Pesto.  Mix well before transferring to the parmesan cheese bowl.  Coat the pasta with the cheese, twirl and serve healthy portions on plates.  If it feels a little 'dry' when mixing, add extra olive oil or a few teaspoons of warm water to help it along. The pasta should feel moist, not dry.

 Lamb chops, beef steak, chicken or shrimp would be a great addition to make it a complete meal.

Lobster with Rice and Artichoke Salad

This is one of the easiest recipes I have ever prepared.

Ingredients:
2 Live Maine lobsters (1 1/4 – 1/1/2 Lbs each)
1 10 Oz Jar of JOY’s Gourmet Artichoke Salad (http://goo.gl/oEHxMp)
2 Tbsp JOY’s Gourmet Garlic Original (http://goo.gl/Fy47Ea)
1 Cup of white rice
1 Tbsp of Butter

Preparations:
Cook rice (see rice cooking instructions), add 10 Oz of Artichoke salad, gently fold with the cooked rice.
Steam the Lobsters for 6 minutes or as soon as they turn red. De-shall the Lobster tails and clause. Serve over 4 tablespoons of rice.

Dipping butter
Melt butter, mix with the Garlic and serve in 2 small dipping dishes. You can also drizzly over the lobsters.

Tangerine Chipotle Salmon

Ingredients:
4 each Salmon fillets, (8 ounce per guest)
½ tsp Sea salt
½ tsp Black pepper, freshly cracked
4 ounces Garlic Joy with Chipotle
6 ounces Mangrove Island Tangerine Vinaigrette
12 ounces Tropical Salsa (optional)
Method:
Preheat oven to 375○F. Check the fillets for bones. Place them in a baking dish. Smear each evenly with one ounce of the Chipotle Joy of Garlic. Then brush each fillet with 1 ½ ounce of the Mangrove Island Tangerine Vinaigrette. Season with the sea salt and freshly ground pepper. Place in the oven for 20 minutes or until done. Serve with the Green Turtle Tropical Salsa.
Serves 4 Can substitute: Arctic char, swordfish, or jumbo shrimp.

The health benefits of garlic are well documented. Millions of people eat garlic, however, most people only eat it cooked. Fewer people actually eat raw garlic, yet eating garlic raw is the way to maximise garlic’s health benefits. Taking garlic supplements does not have the same potency as eating raw garlic recipes.

Garlic, of course, is rich in protein, vitamins A, B and C, and essential minerals, including iron, calcium and selenium. Garlic’s medicinal role in treating illness has been described in over 1000 scientific studies, and modern research into the health benefits of garlic have shown it to be beneficial in a wide variety of conditions, including high blood pressure, the common cold, cancer, as well as bacterial and fungal infections.
